Mushroom Soup

Happy New 2013 to everyone. A warm-hearty soup is the best to stay warm during the cold storm that has arrived to our region. And since I love mushrooms, the best way to enjoy them and satisfy myself is by preparing and sipping this soup. I’ve been thinking of doing this soup long time ago. And this is the best time for it.

Mushroom Soup

– 50 g butter

– 2 tbsp olive oil

– 1 onion, chopped

– 700g mushrooms, coarsely chopped

– 850 ml chicken stock

– 150 ml cream

-1 tbsp dried thyme

-salt and pepper

In a large saucepan, melt the butter and a little of the olive oil and add the onion, and cook for 10 minutes until soft then add a little olive oil and the mushrooms and cook until they are browned.

Stir in the stock and thyme and bring to the boil, then reduce the heat and leave to simmer for about 20 min. Then transfer the soup to a blender and blend until the soup is smooth. Transfer back to the pan and on low heat, add the cream and stir. Season with salt and pepper to taste. Ladle into small bowls and drizzle over some olive oil. Enjoy.



Spaghetti Alle Verdure

Having a pasta dish for dinner is always a pleasure for me. Without following a recipe, mixing new ingredients is a nice culinary adventure for me. The other night, I told my husband, I’m thinking of throwing all these vegetables in one pan, served with some whole-wheat spaghetti… Carrots, cauliflower, mushrooms, black olives; I happen to have them in the fridge…

The result was so good, I loved our new spaghetti alle verdure, rich in flavours. What we did is that we heated -2 tbsp olive oil in a pan, added -1 chopped onion, stiring for a couple of minutes, then we added -2 thinly sliced carrots, leave it to cook for few minutes, to soften, then add a -handful of cauliflower buds, stiring all together for few minutes. Then pull aside the content to the back of the pan, add a drizzle of olive oil and add about -200 g sliced mushrooms, let them cook a little to browned then stir altogether with the other ingredients. -Season with salt and pepper. Pour over a -can of 400g plum tomatoes. Let simmer for a 10 minutes, sprinkle some -dried basil and season with salt and pepper to taste. Add about -50g halved black olives. In the meantime, cook the whole-wheat spaghetti to al dente. Serve the spaghetti with the sauce. And enjoy.

Creamy Pesto Fettucine With Mushrooms And Tomatoes

You know how much I love pasta; I dont mind having every day a different meal. This dish is extremely delicious, we were so delighted, so satisfied and will definitely do it again.

The meal combines different delicious ingredients: cream, pesto sauce, cherry tomatoes, mushrooms, and fettucine. It has a silky, creamy, smooth texture. Imagine pesto sauce with cream, a great pleasure!!

I found this recipe, while browsing the food blogs, on a very interesting, nice blog, This week for dinner, with beautiful pictures and nice recipes. Finding a delicious pasta recipe is like finding a treasure for me.

Pizza Al Pesto Con Funghi E Pomodorini

Last night I was preparing some basil pesto to freeze for later use, so whenever I want to eat spaghetti al pesto, I have some ready pesto. But when I found some whole-wheat dough leftover in the fridge that my mom did the other day, I immediately thought of baking a pizza.

It was late and we were hungry. The pizza was so delicious, crispy, and light. Different than the tomato sauce with some prosciutto and mozzarella cheese.

So I spread 2 tablespoons of basil pesto on a 9 inch round dough, then distribute 2 thinly-sliced mushrooms (funghi) and 2 thinly-sliced tomatoes (pomodorini) then season with some salt and pepper and in the end scatter some grated Parmeggiano Reggiano. And to the oven……until golden crispy.

So go to your kitchen now, knead some dough and bake a greenish yummiii pizza.

Tagliatelle al Pollo con Funghi: Chicken Tagliatelle with Mushrooms

We had my sister and her family over lunch today. We promised them once that we’re gonna invite them to eat our special meal. As you will see and read, we eat alot of pasta and mushroom… I love these kind of italian dishes. We won’t mind eating almost everyday some kind of pasta and add to it few mushroom. I would love to make my meals from scratch; starting by the pasta… I find fresh hand-made food, fresh pasta, fresh grated cheeses, fresh vegetables picked from the market or the farm giving the best real taste, and a dish full of nutrients. One day i will start making my own fresh pasta at home using fresh ingredients.

The following recipe is so easy to make. Once you prepare all the ingredients aside, then the rest is simple.

Mmmmm, the best ever is the smell of mushrooms frying in the pan… it’s just great… The mix of smells was surrounding us and it woke up our senses. yummi…

The meal was so satisfying so delicious, we ate till we were full…

We were happy we put the sun-dried tomatoes because they added a unique sweet taste to the meal.

look how beautiful they are!!


this is the first time i see mushrooms growing under a tree. i dont think they’re edible. but i do love mushrooms, i’d like to add them to any plate. i like their soft sweet silky taste or do they call it ” Umami”!!
