Almond and cinnamon stars
-2 egg whites
-175g icing sugar
-250g ground almonds
-1 tspground cinnamon, leveled
-2-3 tsp lemon juice
In a bowl whisk the egg whites until stiff, whisk in the icing sugar until the mixture is a dropping consistency. Reserve 1/2 the mixture in a small bowl (for the icing) cover with a damp cloth to prevent it drying out.
Mix the groud almonds and cinnamon into the remaining egg white mixture with enough lemon juice to make a smooth paste. Gather into a ball, wrap in cling film and chill for 1 hour.
Pre-heat the oven to 200C. Roll the dough out between 2 sheets of baking parchment to 5mm thick. With a star-shaped cutter cut out stars and place on a baking sheet. Bake for 7-10 min until they start to turn golden. Remove from oven and brush the reserved icing then return to oven and bake for 15 min until the icing has set but isnt coloured.
Let the biscuits cool on a rack, and enjoy with a cup of coffee.
