Cinnamon Cookies

ImageWhenever we feel like weak or down, or lost and everything seems blurry, uncertain, wondering why this or that has happened to us, well, at the end of each dark tunnel, there’s a dim light, waving for us, to reach, and through our path, we might stumble or fall but with each downfall we rise higher. As my friend Loulou said, there’s always hope, in each corner of our path. This is what makes us, strong, ambitious persons. Here’s to new beginnings… this sweet spicy cookie…

Cinnamon Cookies

– 300g flour

-1/2 tsp bicarbonate of sodium

– 1 tbsp cinnamon powder

– 1/2 tbsp mixed spices (i ground, cloves, cinnamon, ginger,coriander & nutmeg)

– 220g muscovado sugar

– 125g cold butter, cut in cubes

– 60ml boiling water

– 1 tbsp honey

Preheat the oven to 180C.

Sift the flour, bicarb, cinnamon, spices in a bowl. Add the sugar, then incorporate the butter with your fingers. In a small bowl, stir the water and honey, then add them to the flour mixture and mix with a round knife to combine.

Make small balls and place them on a tray covered with parchment paper, spacing them enough to deflate when baked. Bake the cookies for 15 minutes until soft and brown. Let them rest 10 min before cooling on a wire rack. Enjoy with a cup of hot chocolate or a tea.

    What a beautiful post, very inspiring and encouraging. And I loved Diana’s words about the universe. Beautiful. I will remind myself that the universe will take care of our wishes whenever I feel confused. Stay focused my dear and see you here soon.

    ya hayati, every thing happens for a good reason. hence the cinnamon cookies. keep your cheer… wish for something then let it go into the hands of the universe. when the time is right , you will get it. hang on kiddo

    To new beginnings indeed, new opportunities, new choices and new recipes :). Even though we may stumble, but how can we learn to stride if we don’t fall from time to time. Good luck Mimi for the new page of which you’ve chosen and may the writings be colorful and tasty.
