Strawberry Cake

Happy Palm Sunday to everyone.

This strawberry cake suits very well the hot days we’re having now. It is light, nice, and I like the sourness of the strawberries combined with the sweetness of the cake.

– 85 g butter soft,

– 1 cup sugar

– 1 large egg

– 1 tsp vanilla

– 1/2 cup milk

– 1 1/2 cup all-purpose flour

– 1 1/2 tsp baking powder

– 1/2 tsp salt

– 500g strawberries, halved

Preheat oven to 180C. Mix in a bowl flour, baking powder and salt. Set aside. In another bowl, beat butter and sugar for 3 minutes, add the egg, milk and vanilla. Mix well then add the flour mixture and combine, pour in a pre-greased pan and arrange the strawberries as close as possible over the batter and bake for 10 minutes, then reduce heat to 170C and bake for 1 hour. Let cool before cutting.
