It is a quick, easy cake to prepare. Last day, I got a phone call from my cousin and my aunt, they were coming over for a visit. The one thing that passed on my mind is to bake a cake. And quickly. Something sweet to have with coffee. Thought of banana cake with some chocolate chips.
Just to tell you how delicious the cake was, half of it was over when it was still warm, well actually, more than warm. So, after that phone call, I headed to the kitchen and in 20 minutes the cake was in the oven.
Banana cake with chocolate chips
– 2 cups cake flour
– 2 tbsp cocoa powder
– 1 1/2 tsp of baking powder
– 1/4 tsp salt
– 4 small bananas, mashed
– 3 eggs
– 1 cup sugar
– 100 g butter, melted and cooled a little
– 1 tsp vanilla extract
– 1 cup chocolate chips, I used semi-sweet
Preheat the oven to 190C. In a bowl, whisk together flour, sifting the cocoa powder, baking soda and salt. Set aside.
In another large bowl, cream butter, pinch of salt, vanilla extract and sugar with an electric whisk until pale and thick. Stir in the mashed bananas then the melted butter.
Add the dry ingredients to the wet and stir till combined. Then add the chocolate chips. Do not over mix.
Pour in a greased pan and bake for 35-40 minutes or until a toothpick inserted in the middle of the cake comes out clean.
