Banana, Oat & Chocolate Chip Cake

3 Dec

I had in the kitchen few ripe bananas, that were ready to be used in a cake batter. I love the sweet flavor they add to a cake. So, a delicious recipe at Butter me up, a nice, rich blog, was good enough for me because it has different grains, oats and flaxseed, that were easy to find around in few stores and supermarkets.

Since banana and chocolate go very well together, I added some (no, extra) chocolate chips. I love chocolate. What can I do. I adapted the original recipe a little bit to make it more suitable.

The cake is delicious, sweet and nice and has a good texture.

Banana, oat chocolate chip cake

 – 1 1/2 cup whole wheat flour

– 1/2 cup oats

– 1/3 cup ground flaxseed

– 1 tsp baking powder

– 1 tsp baking soda

– 3 eggs

– 1/2 cup granulated sugar

– 1/4 cup canola oil

– 1 tsp vanilla

– 3/4 cup yogurt

– 3 ripe bananas, mashed

– 1 cup chocolate chip

Preheat the oven to 170C and grease and flour a baking pan, I used a bundt pan. I love its shape.

Combine flour, oats, ground flaxseed, baking powder, baking soda in a bowl. In another bowl, beat together eggs, sugar, oil, vanilla for 3-4 minutes, then add in the yogurt. Stir in the bananas. Gradually fold in the flour mixture. And fold in the chocolate chip (if using).

Pour batter in the pan and bake for 40 minutes. Let it stand for 15 minutes before unmolding on a rack.

Enjoy.

It’s just a matter of time now that I’ll have a bite, just a small bite as I told you :).

The mixture of Chocolate and Banana is a delicious one and of course a cup of pineapple juice would do the final trick.

I like the way you reveal the inside, yummi layers which urge me to dive my teeth in it.

It’s going to be a very sweet weekend.
