Creamy Pesto Fettucine With Mushrooms And Tomatoes

You know how much I love pasta; I dont mind having every day a different meal. This dish is extremely delicious, we were so delighted, so satisfied and will definitely do it again.

The meal combines different delicious ingredients: cream, pesto sauce, cherry tomatoes, mushrooms, and fettucine. It has a silky, creamy, smooth texture. Imagine pesto sauce with cream, a great pleasure!!

I found this recipe, while browsing the food blogs, on a very interesting, nice blog, This week for dinner, with beautiful pictures and nice recipes. Finding a delicious pasta recipe is like finding a treasure for me.

Creamy pesto fettucine with mushrooms and tomatoes  serves 4

-300 g fettucine pasta

– 250 g white mushrooms

– couple handfuls of cherry tomatoes

– 2 garlic cloves, smashed

– 240 ml cream

– 2 tablespoons pesto sauce

– 2 handfuls grated parmesan

– 2 tablespoons olive oil

– some chopped basil

– salt and pepper to taste

Cook the pasta according to package instructions. Sauté the mushrooms in the olive oil until soft, then add the smashed garlic, tomatoes and sauté for few minutes. Then add the cream, pesto sauce and salt. Let it simmer until thickened for about 5 minutes then add a handful of parmesan and stir.

Combine the pasta and sauce and sprinkle over some parmesan and chopped basil.

Pesto Sauce

– couple handfuls of basil

– 2 garlic cloves, chopped

– 2 tablespoons chopped walnuts

– 1 tablespoon parmesan

– 1/4 cup olive oil

– salt and pepper to taste

Put the basil, walnuts, garlic, salt and pepper in a food processor and pulse few times until you have almost a crumbly mixture then, while mixing, add stream of olive oil till combined. In the end, mix in the parmesan.

    I think we should try the recipe we did before when we used the wine but had the wrong mushroom.

    Now there’s Portobello mushroom, I bet that this time it will taste better. Maybe we’ll cut down the wine a bit, what do you say mimi :).

    Amazing pictures mimi, I don’t mind eating it again and again and again :).

    Day to day I just wait till you tell me you found a new recipe so I can taste a new wonder.

    I may not know what the future holds for me or for us but one thing I surely know is that there will be a lot of pasta on Zeee table.
