Yesterday I was home, so I took the opportunity to use the oranges we got from our tree in the backyard at the village… I’ve been wondering how to enjoy these oranges other than as a drink. I just came up with the recipe, I didn’t open any book or the internet. And it turned out to be a very delicious cake, moist, tender and citrusy. The cake has a strong orange flavour. I enjoyed it with a cup of coffee.
Orange cake
- zest and juice of 4 oranges plus zest of 1 lemon
- 5 eggs
- pinch of salt
- 1 cup caster sugar
- half cup vegetable oil
- 2 cups cake flour
- 2 tsp baking powder
Preheat oven to 200C. Grease a cake pan, I chose a round pan.
Put the zests and the eggs and the sugar in a large bowl, beat with an electric mixer about 5 minutes until the batter is doubled in size and is light and creamy. Stir in the orange juice and teh oil.
Sift over the batter, the flour and baking powder. Fold in gently and pour in the pan and bake for 40 minutes or until the cake is golden brown.

I’d love to have such trees in my garden! That cake must taste divine.

yeah, well you can do it with lemon zest only, without its juice.
