The recipe:
-500g mascarpone
-2 packages savoiardi
-3 eggs ( separated)
-3 tablespoons sugar
-2 cups cold espresso
-1 teaspoon rum
-pinch of salt
-1 tablespoon of good cocoa
First separate the egg yolks from the whites. Meanwhile prepare the espresso. Beat with an electric mixer the egg yolks with the sugar few minutes until they are smooth pale yellow. Add the mascarpone (left to room temperature) and beat. Put in fridge while you work on the whites. Beat the whites with a pinch of salt to stiff peaks. Fold in to the mascarpone mixture very slowly.
In a small shallow dish add the espresso and the rum and mix. Soak the biscuits in the espresso for 3 sec each side, and layer them in the serving baking dish or cups. Spread half of the cheese mixture on the biscuits. Arrange another layer of the savoiardi and top the remaining mascarpone mixture.
Cover with plastic wrap and refrigerate for at least 6 hours, the best would be for overnight. .Before serving, sprinkle cocoa powder over tiramisu. And enjoy.
